Even though there are five of us this weekend, I still arrange a food group and everyone agrees to participate. After making sure we are aware of dietary restrictions (no cucumbers or olives for me please) we each prepare one meal for our buddies. For dinner, I concoct a lemon chicken dish that has always been popular at camp.
Diane’s assignment for the trail is Sunday lunch. Unbeknownst to the rest of us, she plans chicken salad sandwiches wrapped in pita. These morsels have excellent gustatory appeal and are perfect to refresh us on the hot trail. We dine, sitting on the ground and on tree stumps in a clearing in a spruce grove.
Lisa’s assignment is a late lunch on Sunday, for when we arrive back at the car after our hike. Her food is also most delicious: chicken rolled in flatbread with mozzarella, balsamic vinegar and tomato with a sprinkle of herb.
Do you see the pattern here? Chicken for dinner, chicken for lunch, chicken for late lunch. Lettuce pray.

Y’know what Marty serves for our 7 a.m. breakfast on Sunday? Eggs. But as he explains, “Comes from a different part of the chicken.”
